Before the 1930s when homogenisation came into practice, we all drank non-homogenised milk for hundreds of years.

Homogenisation of milk is a process of filtration under high pressure that squeezes milk and its relatively large fat globules through tiny tubes, breaking the globules into microscopic pieces which are then prevented from coalescing by the casein already in the milk.

This process makes milk look homogenous, uniform in its consistency, the whiter milk is just evidence that your food has gone through another ‘process’, rather than to be as nature intended!

At Midoa our pasteurised natural milk isn’t standardised either, this when the milk is separated into its cream and liquid and then re-blended to create the required amount of fat for whole, skimmed, semi-skimmed etc.

Milk Proteins

Milk is a rich source of protein, calcium and omega 3s, all popular for those following a ‘healthy diet’. It has approximately 1g of protein in each fluid ounce. Proteins in milk can be divided into two groups based on their solubility in water. Insoluble milk proteins are called casein, whereas soluble proteins are known as whey proteins.

Both of these groups of milk proteins are considered to be of excellent quality, with a high proportion of amino acids and good digestibility. One important property of casein is its ability to increase the absorption of minerals, such as calcium and phosphorus.

Whey is the other family of proteins, accounting for 20% of the protein content in milk.  Consumption of whey protein is excellent for the growth and maintenance of muscles. As a result, it can be a popular supplement amongst athletes and bodybuilders.

Whole Load Of Goodness!

Many have wrongly assumed that ‘whole’ milk is somehow not good for us, that it is high in fat. A high fat food is one which is more than 17.5g of fat per 100g, a low fat food is one that is less than 3g of fat per 100g. Our whole milk is around 4g per 100g, so virtually a low fat food and packed with vitamins!

 

Bone Health and Osteoporosis

One of the functions of cow’s milk is to promote bone growth and development in the young calf. Cow’s milk seems to have similar effects in adult humans and has been associated with a higher bone density.

We’d rather drink whole unhomogenised milk, as nature intended, which tastes much nicer anyway and doesn’t need squirting through a machine at a million miles an hour!

Oh and you get the added bonus of whether to spoon the cream off the top (excellent treat when scooped into your coffee) or shake the bottle to add the extra cream to your fresh milk – delicious!
